Easy Spanish Recipes

Easy Spanish recipes are the best way to make a deligtful meal in no time. But with time I prefere to go to the local market where you find all the delicious ingredients.

Where you find fresh vegetables of the best quality looking so tempting in all thoughtful colors.

At the market it is also nice to walk around and explore all the different market stalls. You find the freshest fish and sea food brought in this morning by the local fishers, meat of all kinds and the fruits and vegetables which are the most impressive stalls. Changing the offer according to the different seasons of the year.

Well back home you can start the preparation of the best and easy Spanish recipes.

One of my summer favorites are the well know gazpacho. There are lots of different ways to make a gazpacho. After more than 15 years in Spain I have heard and experienced all different kinds of recipes of Gazpacho from friends, families and read in many cooking books, and finally I have found my favorite after all this years.


Preparation time 15 min. And minimum 2-3 hours in the refrigerator before serving

  • Ingredients 4 persons:
  • 2 boats of garlic
  • 6 red tomatoes
  • 1 cucumber (not too big) the cucumber leaves a very strong flavor
  • 1 pepper
  • 2 dl olive oil
  • 2 dl of water

Optional guarnition cut into very small pieces and prepared in separate bowls:

  • 2 boiled eggs
  • Pealed cucumber
  • Pepper
  • Fried bread or fresh white bread

How to do:

  1. Peel the tomatoes and cucumber and cut them into small pieces together with the garlic and pepper.
  2. Put all the ingredients (except for the water) into a high plastic bowl.
  3. Us a blender to mix it all together.
  4. When all the ingredients are well mixed use a strainer to separate the gazpacho which remains as a liquid soup.
  5. Add the water and remove before you put it into the refrigerator to cool it down.
  6. To be served in small bowls (to be eaten with a spoon) or in glasses to drink.

Tips !

  • Serve just before eating
  • Remove the gazpacho before serving
  • If the gazpacho is not cool enough you van add ice cubes to cool it down.


In many restaurants it is common to serve the gazpacho with guarnition, this gives a very nice and sophisticated flavor. To add in each separated bowl after serving.
